The lead up to my first craft fair.

Oh My Goodness!

Well I have booked in to do several fairs through out the year and my very first is just 1 week away, arghhhhhh. I never thought I'd be doing anything of this kind and so early on in my business too. As the saying goes 'Take the bull by the horns'.

 I really have know idea what flavour cupcakes to bake or even how many to make. It could be absolutely chocker and I sell out in the first hour or I only sell a few and have a ton of stock to take home. (I better get my stretchy pants ready just incase ;-))

Flavours that are a MUST:
Vanilla (one of my favourites)
Double Choc Chip
Oreo (Too Die For)
Banana and Toffee
AND..................................... I better get thinking of other flavours.

I'm also going to introduce home-made marshmallow sticks, truffles, cookies and some other sweet treats but I haven't decided what yet. Will do some more research and get back to you. Hope the above pictures wet your appetite and would love to see you all down at Gift-Fest purchasing a cupcake or six.

Mushroom Soup

 What you will need:

  • 90 grams of butter
  • 2 Onions chopped
  • 1 clove of garlic chopped
  • 600 grams of mushrooms (I used a mixture of normal and chestnut mushrooms)
  • 2 tablespoons of plain flour
  • 1 litre of chicken stock
  • 1 or 2 Bay leaves (I used 2 smallish ones)
  • About 50 to 100 mls of cream, depends on your required taste (I used double cream) 
  • Salt and pepper to season
  • Some extra mushrooms and a knob of butter
 Melt your butter in a large pan.

Chop your 2 onions and add to your pan

 Add your chopped garlic and gently fry until soft but not brown. This will take about 6 minutes.

Roughly chop your mushrooms whilst waiting.

Add to the pan and mix them all together. Gently fry for about 10 minutes

Add 2 tablespoons of plain flour and mix it all together.

Add a litre of chicken stock and your bay leaves, leave to simmer for 10 minutes. Add salt and pepper to season.

Hunt for them bay leaves and take them out.

Time to blend.

Add your cream

I added the extra mushrooms and knob of butter in a little pan and cooked. This is optional, I did it to serve over the top so it looks pretty.

And SERVE. either go to your local bakery and get some yummy crusty bread or bake your own like me. I served mine with a Parmesan and prosciutto bread which I made earlier in the day.

Santa got me a new Kenwood

Santa's been early here at the Cake-Tin's household and I got a lovely new Kenwood. Surprised my self as I really wanted a sparkly red Kitchen Aid but this has more power and even came with a few extra attachments which means I have lots of new gadgets to use when I'm cooking too. I have named him Jack :)

I am in the process of making Prosciotto and Parmesan bread wish me luck. Think we might have it with soup so I better run to the shops during the school run and get some mushrooms mmmmmmmmmm
