Mushroom Soup

 What you will need:

  • 90 grams of butter
  • 2 Onions chopped
  • 1 clove of garlic chopped
  • 600 grams of mushrooms (I used a mixture of normal and chestnut mushrooms)
  • 2 tablespoons of plain flour
  • 1 litre of chicken stock
  • 1 or 2 Bay leaves (I used 2 smallish ones)
  • About 50 to 100 mls of cream, depends on your required taste (I used double cream) 
  • Salt and pepper to season
  • Some extra mushrooms and a knob of butter
 Melt your butter in a large pan.

Chop your 2 onions and add to your pan

 Add your chopped garlic and gently fry until soft but not brown. This will take about 6 minutes.

Roughly chop your mushrooms whilst waiting.

Add to the pan and mix them all together. Gently fry for about 10 minutes

Add 2 tablespoons of plain flour and mix it all together.

Add a litre of chicken stock and your bay leaves, leave to simmer for 10 minutes. Add salt and pepper to season.

Hunt for them bay leaves and take them out.

Time to blend.

Add your cream

I added the extra mushrooms and knob of butter in a little pan and cooked. This is optional, I did it to serve over the top so it looks pretty.

And SERVE. either go to your local bakery and get some yummy crusty bread or bake your own like me. I served mine with a Parmesan and prosciutto bread which I made earlier in the day.
